The Bahama Breeze chain of restaurants was founded in 1996 by Darden Restaurants, Inc. with their first location being in Orlando, Florida. The Bahama Breeze restaurants specialize in Caribbean-inspired fresh seafood, chicken and steaks. They are well known for their tropical drinks. There are only about 24 of these restaurants and most of them are suburban retail districts and tourists areas.
Darden’s fiscal year in 2006 showed that Bahama Breeze had sales of $166 million with an average of $5.2 million per restaurant. Even though there is not that big of a chain for these restaurants the ones that are open provide a very lucrative income for their employee’s.

Job description / Average wage
Bartender: The bartender must be licensed and know how to make all sorts of mixed drinks using alcohol, however, the bartender for Bahama Breeze Restaurants must know how to make tropical drinks. They must maintain the bar in an orderly manner making sure that they do not serve minors, customers who have had a bit too much alcohol etc. They usually take the money for the drinks as well. In a restaurant atmosphere many times the wait person will bring over the drink orders. Then the bartender will need to depend on that person to check the IDs of the customers. The average wage for a bartender is $10.00 an hour.
Manager: The manager is usually in charge of the restaurant and the bar operations for the Bahama Breeze in his area. Since there are only 24 of these restaurants across the United States the managers must go to corporate headquarters for their training. They must make sure that they understand the specifics of each restaurant and operations of the bar. The average wage is $60,000 a year plus a very lucrative benefit package.
Wait Staff: The wait person must take the customers orders for food and drinks. They are responsible to check the customer ID to make sure that they are of legal drinking age. They serve the salads and appetizer along with their drinks. When the order is completed then they serve the food. The wait person makes sure that the food is prepared according to the customers liking and that the drinks are prepared right. The average wage for a wait person is $8.00 an hour plus tips.
Dishwasher: As a dishwasher, you’re going to assist the rest of the staff with any duties that they need help with in the back of the kitchen. You’re going to help with cleaning pots, pans, dishes, as well as helping with cleaning the tables in the front of the restaurant. You will also assist with helping with mopping floors, cleaning the kitchen equipment and more. The average wage is $7 to $10 a hour.
