Rock Bottom Restaurants, Inc. operates more than 100 dining and entertainment locations under several brands; brewpub chain, with 29 company-owned locations; other brands are Old Chicago (54 units), The ChopHouse (4), The Walnut Brewery (1), as well as three Sing Sing piano bars and the Axiom nightclub, 8 Old Chicago restaurants are owned by franchisees. The company restaurants feature deep-dish pizza and a trademark 110-brand beer list. The Rock Bottom Brewery units provide menu and microbeers brewed on the premises.
Job Description/Wage Averages
Sous Chef: This person prepares food to order according to recipe, procedures, quality and speed levels and mans the kitchen personnel under the direction of the Chef. In the absence of the Chef is responsible for supervision of all kitchen personnel. His duties include: working knowledge of food cost, best practices (line checks), and purchasing, i.e. produce, seafood, etc.; supervise kitchen personnel under the direction of the chef; ensure food items are prepared according to our standards of quality, consistency and time lines; maintain sanitation procedures and organization of work area adhering to all OSHA regulations; meet all health department standards for safe food handling; operate equipment safely determined by position and OSHA regulations; buy various food products as par levels dictate; maintain food storage, receiving, rotating & stocking as par levels dictate; complete work schedules.
Assistant Manager: This person will oversee the operations of the restaurant during assigned and designated periods; he is to ensure high standards of customer service and profitability while strictly adhering to the policies and procedures of the company. He/She will supervise shift operations; strictly follow company cash handling procedures; complete opening and closing duties; promptly and professionally handle guest comments; communicate all employee issues/complaints to management team; schedules based on a performance schedule-weekly.
Chef: This person provides direction and leadership for employees in the kitchen. While producing great quality food served in a timely manner prepared in a clean and sanitized kitchen. Specifically, this person will coach, teach and train kitchen staff on quality and consistency of product through use of standardized recipes and best practices; develop Sous Chef through written goals and objectives. This would include master projects and serve safe; maintain a fair and safe environment that is conducive to growth and development for all staff members; adhere to best practices regarding food prep and execution to minimize food waste; adhere to recipes and purchasing guidelines.
Cashier: This position handles the cash and non-cash payments of the clients. He/She will also answer customer inquiries, help in processing bills and must see to it that customers are given excellent services.
